Frank Vollkommer

Certified Master Pastry Chef, Frank Vollkommer is currently an Associate Instructor at Johnson & Wales University in Providence, RI. Chef Vollkommer teaches classes in the Universities' Baking and Pastry Degree Program.

With food service and hospitality experience including culinary arts, baking and pastry, education, corporate food ingredient systems, design consulting and business owner, Chef Vollkommer brings a diverse background to our program.

In 2005 Chef Vollkommer completed the testing process to earn the distinction of Certified Master Pastry Chef through the America Culinary Federation. Chef Vollkommer is one of only four chefs to pass the rigorous ten day exam to join a group of eleven European Certified Master Pastry Chefs with the ACF.

Chef Vollkommer has held teaching positions at two major culinary schools, including The Culinary Institute of America and New England Culinary Institute, where he developed curriculum and taught classes in the baking and pastry degree programs. During his tenure at both New England Culinary Institute & The Culinary Institute of America, Chef Vollkommer participated in the design, implementation and operation of two café facilities functioning as capstone courses to baking & pastry degree programs. The development of these café operations inspired Vollkommer's entrepreneurial pursuits to include the opening of a multi-location Pastry Shop and Cafe called The Chocolate Mill in 2009.

Throughout Chef Vollkommer's career he has regularly competed in national and international food shows, earning numerous medals, distinctions and awards. Chef Vollkommer participated in the 2000 Culinary Olympics in Germany, Hotelympia in England, The U.S. Pastry Competition, and received The Medal of The French Government for winning the Grand Prize of the Salon at the New York Food Show. In 2010 Chef Vollkommer was named as one of the "Top 10 Pastry Chefs in America" by Dessert Professional Magazine. In 2012 Chef Vollkommer received the DVC Award from Johnson & Wales University in Charlotte NC. Chef Vollkommer has participated in the organization and judging of numerous industry competitions including The National Bread & Pastry Team Championships and The World Chocolate Masters.
